Spotlight on Acai + Vegan Cheesecake (GF/ DF/ V)

How to use it

I have been using the Nutra Organics Acai Berry Powder as a sneaky way to introduce more flavour and antioxidants into my children’s diet, especially to sustain post Summer vitality and enhance pre-Winter health. I'm even planning to add it in next summers coconut and mixed berry ice blocks already.

While there are many alternatives on the super foods market I prefer this one. I appreciate that it contains the berries and Mango powder as natural sweet ingredients rather than using sweeteners such as Stevia or artificial alternatives. Products like this one that relies only on the ingredients to give a flavoursome punch are super smart! The power is in the functional food powders not in the hidden excipients. I like it and it's totally worth my money!

VEGAN ACAI CHEESECAKE

Dairy free, wheat free, sugar-free - AMAZING!

Crust:

  • 50g The Wholefood Pantry Organic Cacao
  • 50g The Wholefood Pantry Cacao Nibs
  • 100g raw walnuts (or almonds)
  • 1/2 cup The Wholefood Pantry Organic Dates
  • 1 tsp vanilla essence, organic

Filling:

  • 200g The Wholefood Pantry Cashews, soaked for 2 hours minimum
  • Juice of 1 lemon
  • 75ml The Wholefood Pantry Coconut Oil, melted
  • 1 tbsp tahini
  • 1 tsp vanilla essence, organic
  • 1/2 cup The Wholefood Pantry Organic Dates
  • 2 bananas, peeled and mashed
  • 300g fresh or frozen blueberries
  • 80g Nutra Organics Acai Berry Blend

To make the crust: use 50g of cacao powder and add to a food processor or blender with the walnuts, dates and vanilla. Pulse the ingredients until a crumbly dough is formed, if it is not sticking together add 1 teaspoon of water at a time until the desired texture. Transfer to a bowl and mix in 50g cacao nibs. Cover and place in refrigerator until needed.

To make the filling: In a food processor or blender, mix the cashews with the lemon juice, coconut oil and tahini. Blend until it is completely smooth. Add Acai Berry Blend vanilla, dates, banana mash and half of the blueberries. Blend again.

To assemble the ‘cheesecake’: In a 23cm springform pan, smooth the crust mixture evenly over the base and press down to make a compact layer. Pour the filling on top, cover and place in the freezer for an hour. Remove the chilled cake and decorate with the remaining blueberries, pressing them down gently so that they stick. You can decorate (as we did) with delish ‘acai bowl’ ingredients, like chia seeds, nibs, flowers, berries and coconut chips. Re-cover and freeze for another 2-3 hours. To serve, release the cake from the pan and defrost for 5 minutes to soften.
