How to use
You’ll need:
3 eggs
125 g cold butter
150 ml cream
150 ml water
Method:
Preheat oven to 160 °C and line a 20 cm × 20 cm square tin with baking paper.
Empty contents of the mix into a large bowl and remove ½ cup to use later for the topping.
Grate the cold butter into the remaining mix and rub through with your fingertips until it starts to clump together.
Press the dough into the base of the tin and bake for 15–17 minutes.
While the base is cooking, whisk together eggs, cream, water, and the reserved ½ cup of mix.
Pour the mousse mixture over the base and bake for 20 minutes, or until just set.
Cool completely, dust with cocoa powder, and slice into 16 serves.
