How to use
You’ll need:
3 eggs
125 g cold butter
3 tablespoons (60 ml) lemon juice
Zest of 1 lemon
Method:
Preheat oven to 160 °C and line a 20 cm × 20 cm baking tray with baking paper.
Place the contents of the packet into a bowl and rub in the butter until the mixture resembles breadcrumbs.
Press half the mix into the baking tray and bake for 20 minutes, or until golden.
In a separate bowl, combine eggs, lemon juice, and zest with the remaining crumbs and mix well.
Pour over the cooled base and bake for another 10 minutes, or until firm.
Allow to cool completely before slicing into 20 pieces.
