Scoop some hydrolysed collagen peptides into a glass of cold water and leave it in the fridge overnight. Morning comes and it's still just cloudy water. Do the same with a spoonful of gelatin, warmed through first, and by morning you can turn the glass upside down over the sink and nothing moves. Same starting protein. Nothing alike.

If you assumed that was just a texture thing, or that the fancier, more processed peptide powder was simply the upgrade on old-fashioned gelatin — fair enough, that's an easy place to land. Collagen supplements have spent the better part of a decade selling "hydrolysed" as the premium word, something that sounds more scientific than a tin of gelatin from someone's nana's pantry. What that story leaves out: hydrolysing collagen far enough to dissolve instantly in cold water is the same process that strips out its ability to gel. Full stop.

Where the two split

Long chains link. Short chains can't.

Gelatin comes from gently breaking down collagen, but the chains that come out the other end are still long — long enough that once they cool, they link back into a mesh, which is physically what a gel is. Food scientists measure this with something called Bloom strength: roughly how much weight a set gel can hold before it caves in. Longer chains, higher Bloom number, firmer set.

Why one gels and one can't

A gel is a mesh. It needs chains long enough to re-link.

Bloom strength = how firm a gel sets. Long chains, high Bloom. Hydrolysed peptides carry basically none — no set, at any dose.

Hydrolysed peptides go further. The chains get broken down much smaller, deliberately, so the powder dissolves the second it hits cold water instead of needing to be warmed and bloomed first. That's exactly why peptides are more convenient for a smoothie, and exactly why they carry basically no Bloom strength at all. Chains too short to link back up, in any drink, at any dose. You don't get maximum convenience and a gel in the same tub. Pick one.

Why the amino count matters

It comes down to glycine

Both forms still lean on glycine, the amino acid that makes up roughly a third of collagen's structure. A 2018 study in the journal Amino Acids cultured cartilage cells in a lab and found that raising the glycine available increased collagen production by 60 to 75 percent, which suggests the body's own glycine supply is often what limits how much it can rebuild.

As a drink

1 tablespoon (10 g) stirred into tea, coffee or juice — hot or cold.

As a jelly

Bloom a quarter cup (40 g) into half a cup of cold water first, stir until even, add to 250 ml of hot liquid, then fridge for at least two hours. Less gelatin, softer set; more, firmer.
